tapas night and deep fried smoked cheddar recipe
This meal was basically everything I could ask for in a birthday dinner – and we’re still a few months away! We started off with beef carpaccio drizzled in lemony caper dressing, topped with arugula and a generous sprinkling of cheese.
Homemade bread is becoming a regular part of our weekend meals, and it’s amazing! Especially topped with carpaccio.
These crunchy little shells were filled with a tomato, cheese and basil mixture.
And you can’t really go wrong with bacon wrapped asparagus.
Earlier this year during a trip to Atlanta, I tried fried green tomatoes for the first time, and they were awesome. Turns out panko encrusted fried red tomatoes are pretty awesome too!
Keeping with the frying theme and the bacon wrapping theme (excellent choice of themes, right?) bacon wrapped dates stuffed with goat cheese were also on the menu.
But honestly, bacon wrapped asparagus and fried tomatoes can’t really compete with this next dish…battered smoked cheddar. Yup, deep fried cheese – that happened. It was glorious. Here’s Tim with the details…
Deep Fried Smoked Cheddar Cheese and Honey
1/2 pound of smoked cheddar cheese, 1 inch cubes
1/2 cup of flour
1 egg, whisked
1 cup of panko bread crumbs
2 tablespoons of honey
oil for frying
pepper to taste
Heat your oil to 375°F. While it heats, roll your cheese cubes in the flour, then move to the egg and finish by covering them in panko.
Place the cheese in the deep fryer and cook for 45 seconds to 1 minute. Just until golden on the outside.
Drizzle the cheese with the honey while hot. Finish with pepper and maybe garnish with something green. Enjoy!
